Napa cabbage (Brassica rapa subsp. pekinensis) forms an oblong head of pale-green, softly crinkled leaves with crisp, juicy white ribs. Its flavor is mild, slightly sweet, and less sulfurous than round cabbages, making it approachable raw and quick-cooking. Leaves wilt tenderly while the ribs keep a pleasant snap, so it adapts well to both brief heat and low, slow simmering.
Widely used across East Asia, napa cabbage is foundational in kimchi, hot pots, dumpling fillings, stir-fries, and brothy soups. It’s also excellent raw in salads and slaws. To prep, split the head and rinse between leaves to remove grit, trim the core, and slice across the ribs for even texture. Light salting helps wilt and season before mixing into slaws or fillings; avoid overcooking to preserve sweetness and prevent sulfurous notes.
