Muscovado sugar is an unrefined, moist cane sugar with fine to medium crystals coated in dark molasses. It tastes robust and treacly with a warm, toffee-like aroma; the high molasses keeps it soft and clumpy and adds moisture to baked goods. It dissolves readily in hot liquids and deepens color and flavor in caramels, sauces, barbecue rubs, and gingerbread. Sold as light or dark muscovado in slightly sticky packs or bags.

Traditionally made in the Caribbean and Indian Ocean sugar-growing regions, muscovado spread through British trade and confectionery. It remains common in Indian, Mauritian, and Filipino cooking and is produced by evaporating cane juice with minimal refining, retaining more molasses than standard brown sugar.
