Unrefined cane sugar is minimally processed sugar made from sugarcane that retains some of its natural molasses. Depending on style, it ranges from large golden crystals (turbinado, demerara) to moist, dark granules (muscovado) and solid cakes (panela, piloncillo, jaggery). Its flavor is more complex than refined white sugar, with notes of caramel, toffee, and light molasses.
It sweetens at roughly the same level as white sugar but may dissolve more slowly due to larger crystals and can add color and moisture to doughs and batters. In beverages, syrups, and sauces it brings a warmer, rounder sweetness; in baking it can influence crumb, spread, and browning, especially when styles with higher molasses content are used.
