Dark brown sugar is refined white sugar blended with a higher proportion of molasses than light brown sugar, giving it a moist, clumpy texture and a deep amber color. The added molasses lends pronounced notes of toffee, caramel, and a subtle bittersweet edge, while also increasing acidity and hygroscopicity (moisture retention) in baked goods.
Because of its moisture and acidity, dark brown sugar can promote spread, browning, and chewiness in cookies and enhance depth in sauces and glazes. It is a staple in gingerbread, spice cakes, barbecue rubs and sauces, and rich caramels, and can be swapped with light brown sugar when a more robust molasses flavor is desired.
