Broccolini is a slender green vegetable with long tender stems, small florets, and edible leaves. It tastes mild and slightly sweet with a crisp-tender bite, and cooks quickly by stir-frying, roasting, grilling, or steaming. Sold in bunches with thin stems, it works well as whole spears or chopped for sautés, pastas, and side dishes.
Bred in Japan in the 1990s as a hybrid of broccoli and gai lan, it spread to North America and Europe through mainstream markets. It is now grown in open fields and greenhouses, with steady supplies from California, Mexico, and other temperate regions.
