Black cardamom pod is a large, ridged brown seed pod enclosing sticky black seeds in a papery husk. Its flavor is smoky, camphoraceous, and earthy with a whiff of campfire; the pod holds up to long simmering and steaming. Cooks use it whole to perfume rice, lentils, curries, stews, and chai; it is typically sold whole or split, sometimes with loose seeds.
Native to the eastern Himalayas, it is grown in Nepal, Bhutan, and northeast India and traditionally dried over open fires, which creates its signature smokiness.
