Green cardamom pods are small, ribbed, pale green capsules filled with aromatic black seeds. They deliver a bright, floral-citrus flavor with cool eucalyptus lift; cracking or grinding releases intense aroma for rice dishes, curries, chai, and pastries. Use whole pods to gently infuse then discard, or grind the seeds for concentrated spice; sold as whole pods, decorticated seeds, or ground.\n\nNative to the Western Ghats of India, green cardamom spread across South Asia and the Middle East through the spice trade and later into Scandinavian baking and coffee traditions. Today it is cultivated in India, Sri Lanka, and Guatemala, where pods are harvested slightly underripe and carefully dried to preserve color and volatile oils.
