Turbinado sugar is a coarse, light brown granulated cane sugar with large, sparkling crystals. It tastes clean and mellow with gentle molasses notes, and the chunky grains deliver a satisfying crunch; it caramelizes readily for crisp finishes. Developed through turbine-centrifuge refining of sugarcane in the late 19th century, the style spread from cane-growing regions in the Caribbean and Central America to North America and Europe.
