Demerara sugar is a lightly refined cane sugar with large amber crystals. It offers toffee-like molasses notes and a crackly crunch that holds up on finishes. It is used to top baked goods, sweeten coffee and tea, rim cocktails, and make caramel or syrups; typically sold as coarse crystals.\n\nNamed for the Demerara region of Guyana, it later spread to production centers in Mauritius and parts of Latin America. Producers centrifuge cane syrup to form large crystals with a thin molasses coating, and the style remains popular in British baking and modern cocktail bars.
