Modern sweet onions were developed in the U.S. South and Pacific Northwest from low-pyruvate cultivars; notable types include Vidalia (Georgia), Walla Walla (Washington), and Maui (Hawaii). They are grown in well-drained soils and harvested in spring to early summer, then marketed quickly as short-storage onions.
