Sage is a soft, silvery-green herb with velvety oval leaves. Its piney, resinous aroma and mildly bitter flavor hold up to heat; cooks fry whole leaves until crisp, infuse butter and cream, and chop it into stuffings, roasts, and pan sauces. Sold as fresh sprigs or loose leaves, and also commonly found dried and rubbed.
Sage originated in the Mediterranean and spread through Europe; it anchors Italian and Balkan cooking and appears widely in British and North American roasts and stuffings. Growers harvest sprigs before flowering, and commercial supply comes from field and greenhouse operations.
