Orzo is a small, rice-shaped pasta made from durum wheat semolina. It cooks to a tender, silky bite and readily absorbs brothy sauces and pan juices; common in soups, pilafs, salads, and baked casseroles, and sold primarily dried with some whole-wheat versions.\n\nDeveloped in Italy within the pastina family, it spread across Mediterranean tables. Greek and Turkish cuisines feature similar shapes called kritharaki and arpa sehriye, produced by extruding and cutting dough through small dies for uniform grains.
