Littleneck clams are small hard-shell clams with tightly closed, ridged beige-gray shells. Their meat is sweet and briny with a tender, slightly springy bite; they cook in minutes and toughen if overdone. Sold live in the shell, they excel steamed with wine, tossed into pasta, grilled on the half-shell, or shucked for raw preparations.

A size grade of the Atlantic hard clam (quahog, Mercenaria mercenaria), littlenecks are native to the eastern coast of North America and widely farmed from the Mid-Atlantic to New England. They feature prominently in New England and Italian-American cooking and are harvested by hand rakes or from nearshore aquaculture beds.
