Linguine is a long, flat ribbon pasta slightly narrower than fettuccine. It cooks to a tender, springy bite and its broad surface clings well to olive-oil or cream sauces, pestos, and seafood. Sold mostly dried, it also appears fresh in some markets.
Originating in Liguria, Italy, it became a staple with pesto and seafood sauces and spread widely through Italian cuisine globally. Traditionally made from durum wheat semolina and extruded through bronze or Teflon dies, modern versions include whole-wheat and gluten-free styles.
