Lavash is a thin, soft flatbread baked from wheat flour, water, and salt. It cooks quickly into large, pliable sheets with blistered, lightly charred spots and a tender chew. Mild wheaty flavor makes it versatile for wraps, kebabs, and mezze, and it is sold as round or rectangular sheets, sometimes pre-cut or rolled.
Originating in Armenia and the South Caucasus, lavash is traditionally slapped onto the walls of a tonir (tandoor) and is common across Western Asia and the Levant. Regional versions range from soft, flexible loaves to dried boards rehydrated before serving.
