Guajillo chile is a slender, dried red chile with smooth, leathery skin and a deep brick color. It offers mild to medium heat with berry-like fruitiness and a clean, tannic finish. Cooks toast and soak the pods, then puree for sauces, moles, and marinades, or grind into a fine powder. Sold mainly as whole pods and as ground chile.\n\nOriginating in Mexico, guajillo is the dried form of the mirasol chile and is a staple across central and northern states. It features prominently in Mexican salsas, adobos, and moles, often alongside ancho and pasilla. Pods are ripened red and sun- or air-dried before distribution throughout North America.
