Green gram is a small, oval, green-skinned legume with a pale interior. It cooks faster than many beans, yielding a tender, creamy bite with a mild, slightly sweet, nutty flavor. Used whole in soups, curries, and porridges, split and hulled as moong dal, or sprouted for salads and stir-fries. Sold dried whole, split with or without skins, and as fresh bean sprouts.
It originated in the Indian subcontinent and spread across Southeast and East Asia through early trade. Today it is widely cultivated in India, Myanmar, China, and other tropical regions as a short-season pulse and processed into dal and sprouts.
