Artichoke is the unopened flower bud of a cultivated thistle, with layered green scales guarding a tender heart. Its leaves and heart taste nutty and slightly bitter, turning silky when steamed or braised and taking on smoky edges when grilled or roasted; cooked whole for leaf-dipping or trimmed to hearts for pasta, pizza, salads, and creamy dips; sold fresh, or as hearts canned or marinated in jars.
Originating around the Mediterranean, it was refined by Romans and later prized in Italian, Spanish, and French kitchens. Modern North American production is centered in coastal California with seasonal peaks in spring and fall.
