Oatmeal Gems

Ingredients
- 1/2 C butter
- 1/2 C granulated sugar
- 1/2 C light-brown sugar
- 1 egg
- 1/4 pt.
- 1/2 double acting baking powder
- 1 vanilla
- 1 C quick oats – unworked
- 3/4 C flour
- 1 can flaked coconut

Instructions
1. Cream butter, granulated sugar, and light-brown sugar until light and fluffy.
2. Add egg and vanilla; beat until combined.
3. Stir in 1/4 + pt., double acting baking powder, flour, and unworked quick oats until just combined.
4. Fold in flaked coconut.
5. You may add 1/2 t cinnamon, 1/4 + 1/2 t. cloves & freshly grated nutmeg, or mix in nuts, chocolate chips, or raisins if desired.
6. Drop spoonfuls of dough onto a baking sheet and bake 8-10 minutes at 350°F or until brown.
