
Oatmeal Gems
Ingredients
- 0.5 C butter
- 0.5 C granulated sugar
- 0.5 C light-brown sugar
- 1 egg
- 0.25 pt.
- 0.5 double acting baking powder
- 1 vanilla
- 1 C quick oats - unworked
- 0.75 C flour
- 1 can flaked coconut
Instructions
- 1. Cream butter, granulated sugar, and light-brown sugar until light and fluffy.
- 2. Add egg and vanilla; beat until combined.
- 3. Stir in 1/4 + pt., double acting baking powder, flour, and unworked quick oats until just combined.
- 4. Fold in flaked coconut.
- 5. You may add 1/2 t cinnamon, 1/4 + 1/2 t. cloves & freshly grated nutmeg, or mix in nuts, chocolate chips, or raisins if desired.
- 6. Drop spoonfuls of dough onto a baking sheet and bake 8-10 minutes at 350°F or until brown.
