Ingredients

  • 3/4 ounces Campari
  • 1 1/2 ounces pineapple juice
  • 1/2 ounces lime juice (~0.5 medium limes)
  • 1/2 ounces simple syrup
  • ice cubesfor shaking

Instructions

1. Place a large ice cube in a rocks glass to chill; set aside.

2. Add dark rum, Campari, pineapple juice, lime juice, and simple syrup to a cocktail shaker.

3. Add the ice cubes, then shake hard until well-chilled and slightly frothy, 10–12 seconds.

4. Strain into the prepared rocks glass.

5. Garnish with the pineapple wedge and serve immediately.

The Jungle Bird is a tropical-yet-grown-up rum cocktail that balances ripe pineapple and zesty lime with the distinctive bittersweet bite of Campari. Its texture is lush and lightly foamy from shaken pineapple juice, while a backbone of dark rum brings molasses depth and warmth. Served over a large rock, it sips refreshing but complex, with sweetness, acidity, and bitterness snapping neatly into place.

Created in the late 1970s at the Aviary Bar in the Kuala Lumpur Hilton, the Jungle Bird is one of the few modern classics to emerge from Southeast Asia. Originally poured as a welcome drink, it bridged tiki exuberance and contemporary cocktail structure. Rediscovered during the cocktail revival, it gained global traction with variations on rum choice and Campari balance, and is now recognized by major cocktail bodies and bars worldwide.
