Dark rum is a deep amber to mahogany distilled spirit made from sugarcane byproducts or juice and aged in oak barrels. It shows molasses, toffee, vanilla, and charred-oak notes with a warm finish. Cooks flambe desserts, enrich caramel sauces, and soak dried fruit with it; bartenders shake it into tiki and classic cocktails; most bottles are 40% ABV, spanning standard dark, black, and extra-aged styles.
Rum developed in the Caribbean during the sugarcane trade, with influential dark styles from Jamaica, Barbados, and Guyana. Aging in charred or ex-bourbon oak and occasional caramel coloring helped define the dark category as production spread across the Americas and beyond.
