Yukon Gold potato is a medium, thin-skinned yellow-fleshed potato with smooth golden skin and creamy interior. It holds its shape when boiled yet mashes to a buttery, velvety texture with mildly sweet, earthy flavor; used for roasting, mashing, potato salads, soups, and gratins, and sold loose or in bags.
Developed in Canada in the 1960s and released in 1980, it became popular across North America and Europe. It is grown in temperate regions as a mid-season potato.
