Yellow squash is a tender summer squash with glossy yellow skin and pale, seedy flesh. Its mild, slightly sweet flavor and high moisture cook quickly, turning tender with light browning. Slice or dice for saute, stir fries, and quick roasts; grill planks or coins; shave raw into salads; stuff halved squash for baking. Sold as straightneck or crookneck types, usually picked small to medium for best texture.\n\nDomesticated from Cucurbita pepo in the Americas, summer squashes spread widely after European contact. Yellow straightneck and crookneck types were refined in the United States and feature in Southern and Midwestern cooking, as well as Mediterranean-style vegetable dishes. Growers harvest immature fruit throughout warm months for continuous production.
