Wheat is a cereal grain consisting of small, tan kernels enclosed by bran and germ. It cooks to a chewy bite with a warm, toasty aroma and, when milled, forms the base for flours and semolina; prepare pilafs and porridges or crack and steam it into bulgur, and find it sold as whole berries or cracked forms.
Domesticated in the Fertile Crescent from wild grasses, wheat spread across the Middle East, Europe, and South Asia and is now cultivated worldwide. Modern production distinguishes hard and soft, spring and winter types, harvested dry and stored as grain before milling or cooking.
