Unsulphured molasses is a dark, viscous syrup made by concentrating the juice of mature sugarcane without sulfur dioxide treatment. It tastes robust and bittersweet with deep caramel and mild licorice notes, and pours in slow glossy ribbons; it adds color and body to batters, sauces, and glazes. Common kitchen uses include gingerbread, baked beans, barbecue sauces, and marinades, and it is typically sold as light or dark molasses.
Produced from fully ripened cane, unsulphured molasses became standard as refining improved in the Caribbean and North America, replacing earlier sulphured styles used for immature cane. It remains a staple in Southern U.S. baking and barbecue traditions and appears in British and Caribbean cuisines, where local mills concentrate and clarify cane juice before final evaporation.
