Molasses is a thick, dark syrup obtained from refining sugarcane or sugar beets. It tastes bittersweet with deep caramel notes and a slight mineral edge, and it pours slowly and clings to spoons; used to sweeten and color baked goods, barbecue sauces, beans, and marinades; sold as light, dark, and blackstrap styles.
Sugarcane molasses developed in Caribbean and Brazilian sugar industries and spread to North America and Europe through maritime trade. Beet molasses emerged with industrial sugar-beet processing in temperate regions, and both appear across Southern U.S., Caribbean, and British cuisines.
