Swiss chard is a leafy green with broad, crinkled leaves and thick, colorful stems. Its flavor is mild, earthy, and slightly beet-like, and the leaves cook down to a silky texture; cooks sauté or braise it, add to soups and stews, or fold into pastas and gratins, commonly sold as green or rainbow bunches.
Cultivated around the Mediterranean, chard spread through Europe and later to the Americas via kitchen gardens and market farming. It features in Mediterranean and Middle Eastern cuisines and is now grown widely in temperate regions, with year-round supply supported by field and greenhouse production.
