Nutmeg is the seed of the nutmeg tree, sold whole as hard brown ovals or ground into a fine, tawny powder. It has a warm, sweet, slightly piney aroma and shows best when freshly grated. Cooks use it to finish bechamel, enrich baked goods and custards, season sausages, and flavor holiday drinks; available whole for grating or pre-ground for convenience.
Native to Indonesia's Banda Islands, nutmeg spread through the spice trade and now grows in Indonesia, Grenada, India, and Sri Lanka. Seeds are dried to shrink the kernel and separate the lacy aril (sold as mace) before export.
