Mace blade is the dried, lacy aril that surrounds the nutmeg seed, sold as fragile reddish-orange shards. It delivers a warm, floral-citrus aroma and sweet, gently peppery spice, milder and more delicate than nutmeg. Use whole blades to infuse creams, stews, and pickling liquids, or grind just before cooking for baking, sausages, and spice blends; commonly sold as whole blades or ground.
Harvested from Myristica fragrans native to the Banda Islands of Indonesia, mace spread through South and Southeast Asia, the Middle East, and Europe via spice trade. The arils are removed from the nutmeg, flattened, and sun-dried into blades before packing.
