Shishito pepper is a slender, thin-walled Japanese chile harvested green. Most are mild with an occasional spicy outlier; they blister quickly over high heat, turning sweet and lightly smoky with a tender bite. Sold fresh by the pint or bag, they are cooked whole (stems on) for blistered snacks, skewers, or quick saute dishes.\n\nOriginating in Japan, shishito became popular through izakaya cooking and spread to North American markets in the 2010s. Growers harvest the pods immature and ship them fresh; production now includes Japan, Korea, Mexico, and U.S. farms.
