Shaoxing wine is a Chinese rice wine with a tawny hue and a warm, nutty aroma. It brings gentle sweetness and malty depth to stir-fries, marinades, and braises, and it excels at deglazing woks and balancing soy-based sauces; bottles are commonly 14–18% ABV and may be sold salted for cooking or unsalted for drinking.

Originating in Shaoxing, Zhejiang province, it is a classic style of huangjiu that spread throughout regional Chinese cuisines, especially Jiangnan cooking. Traditional production ferments polished rice with a wheat-based starter and ages the wine in clay jars, developing its characteristic color and complexity.
