Rhum agricole is a rum distilled from fresh-pressed sugarcane juice. It shows grassy, mineral aromas and a dry, peppery snap; texture is light to medium with a volatile lift. Used in ti' punch, daiquiris, and highballs, and for flambe or deglazing; commonly sold as blanc (unaged) and vieux (aged) styles around 40–55% ABV.
It developed in the French Caribbean, especially Martinique and Guadeloupe, and spread to other cane-growing regions such as Reunion and Madeira. Protected designations in Martinique outline traditional cane cultivation, fermentation, and distillation methods.
