Cachaça is a clear or lightly golden Brazilian distilled spirit made from fermented sugarcane juice. It shows grassy, fruity aromas with a faint funk and a clean, cane-sweet snap; most bottles are light-bodied and dry. Use it to shake caipirinhas and other citrusy highballs, to flambe fruit, or to perfume marinades; sold unaged (prata/branca) and aged (ouro) in various woods.
Developed in 16th-century sugar mills of colonial Brazil, cachaça spread from coastal engenhos to inland regions and became the base spirit of Brazilian cocktails. Production is nationwide, with notable craft output in Minas Gerais and São Paulo, using pot and column stills and a range of native and oak woods for aging.
