Mostacciolo is a smooth-sided, medium-length tube pasta from the penne family, usually cut on a diagonal. Made from durum wheat semolina, its lack of ridges creates a sleeker bite and a slightly lighter sauce cling than penne rigate while still offering a pleasantly firm, chewy texture when cooked al dente.

Common in the United States—especially in the Midwest—mostaccioli is a staple for baked pasta dishes, buffet service, and weeknight meals.
