Marsala wine is a fortified Sicilian wine sold in dry and sweet styles. It brings caramelized, nutty aromas and gentle acidity that enrich pan sauces and reductions, and it performs well in braises and custards. Some producers use animal-derived fining agents, so strict vegetarians should seek vegan-certified bottles.
Originating around Marsala in western Sicily in the 18th century, it was fortified with grape spirit for stability and traveled widely. Today it features in Italian and Italian-American cooking, and quality bottlings are aged oxidatively in casks using systems similar to solera.
