Flank steak is a long, flat beef cut from the underside of the animal with a pronounced grain. It has a deep, beefy flavor and a firm chew that turns tender when sliced thinly across the grain. It excels with quick, high-heat cooking and takes well to marinades; common uses include grilling, broiling, and stir-frying for fajitas, tacos, and salads. Typically sold as whole slabs around 1–2 pounds, sometimes pre-trimmed or pre-sliced.
The cut is recognized in European and American butchery and gained wide North American popularity through dishes like fajitas and London broil. It features in Mexican, Tex-Mex, and East Asian cuisines, where brief marinating and fast cooking highlight its flavor and texture.
