Demerara syrup is a simple syrup made by dissolving demerara sugar in water, typically at a 1:1 or 2:1 ratio. Demerara sugar retains some molasses, giving the syrup a warm amber color and flavors reminiscent of toffee, caramel, and light molasses. Compared to white sugar syrup, it lends more depth and a subtle rum-like nuance from the cane’s natural character.

Widely used in classic and tiki cocktails, demerara syrup adds sweetness, body, and roundness that pairs especially well with aged spirits. It’s equally at home in coffee drinks, iced tea, and as a finishing drizzle for oatmeal or fruit. Rich (2:1) versions provide greater viscosity and shelf life, while 1:1 is easier to mix and measure.
