Delicata squash is a small, oblong winter squash with cream-yellow skin striped green and orange and pale orange flesh. Its thin, edible skin turns tender when roasted, and the flesh tastes sweet and nutty with a hint of brown-sugar aroma; it cooks quickly, caramelizes at the edges, and works well halved and stuffed, sliced into rings, or roasted as cubes for salads and tacos.\n\nBred from Cucurbita pepo in North America, delicata appeared in late 19th-century seed catalogs and reemerged widely after disease-resistant bush types were released in the 1990s. Today it is grown across temperate regions and enters markets in early fall through winter.
