Chipotle chile in adobo is a smoked ripe jalapeño packed in a tangy, brick-red tomato-vinegar sauce. It tastes deeply smoky with medium heat, and the sauce reads sweet, garlicky, and a little sharp; cooks mince the chiles or blend both peppers and sauce to flavor salsas, marinades, stews, and creamy condiments, and cans commonly contain whole or sliced pods in plenty of sauce.\n\nOriginating in Mexico, chipotles come from smoke-drying mature jalapeños, while adobo refers to a chile-spiced tomato and vinegar marinade shaped by Spanish influence.
