Celery seed is the tiny, brown seed of wild celery used as a pungent spice. It tastes herbal, slightly bitter, and warm with a camphor-like aroma, and the whole seeds stay crunchy when unground. Cooks season pickles, dressings, coleslaw, and potato salads with it, and use it in rubs and spice blends; sold whole or ground.
The spice originated around the Mediterranean and spread through Europe before becoming a staple in North American pickling. Today it is produced in India, China, and parts of Europe, where seeds are dried, cleaned, and packaged for sale.
