Carnaroli rice is a medium-to-short grain Italian rice with pearly, translucent kernels. It stays firm at the core while releasing surface starch for a creamy, wave-like risotto and absorbs flavorful broth without breaking; cooks to plump, separate grains that readily emulsify with butter and cheese. Typically sold as polished superfino, often vacuum-packed in 500 g or 1 kg bags.
Developed in northern Italy in the mid-20th century, it became a risotto staple across Lombardy and Piedmont. Most production lies in the Po Valley around Pavia and Vercelli, with export to global markets.
