Bison is lean, dark-red meat from the North American bison. It tastes clean and beef-like with a faint sweetness, has a fine grain, and cooks quickly due to low intramuscular fat; common retail forms include ground meat, steaks, roasts, and stew cubes. Use it for burgers, seared steaks, braises, chilies, and slow roasts where gentle heat preserves tenderness.\n\nOnce central to Indigenous cuisines across the Great Plains, bison nearly disappeared in the 19th century before modern conservation and ranching revived supplies. Today it is mostly farm-raised in the United States and Canada and features in contemporary North American grilling, burger, and slow-cooking traditions; slaughter and fabrication mirror beef practices.
