Bamboo shoot is the tender young sprout of the bamboo plant, pale cream to light yellow with a conical shape and layered sheaths. Mild and slightly earthy, it keeps a crisp, watery crunch after brief cooking and readily absorbs sauces. Common in stir-fries, soups, braises, and pickles, and sold fresh, parboiled vacuum-packed, or canned in slices or strips.
Culinary use spans East and Southeast Asia, notably in Chinese, Japanese, Korean, Thai, and Vietnamese cuisines. Shoots are harvested in spring from various bamboo species and often parboiled to reduce bitterness before cooking or canning for export.
