Baby potatoes are young, small potatoes harvested before full maturity. They have thin, tender skins and a creamy interior with mild earthy sweetness; their small size helps them cook evenly and hold their shape when boiled or roasted, making them ideal for potato salads, sheet-pan roasts, skewers, and quick stovetop saute. Sold in red, yellow, or mixed-color bags.
Potatoes originated in the Andean highlands and spread worldwide via European cultivation. Harvesting ‘new’ potatoes early is common in Northern European and North American cuisines and now occurs across temperate growing regions.
