- 2 tsp honey – for drizzling
- 1/4 tsp ground cinnamon
- 1 pinch fine sea salt

2. Stir the natural peanut butter until smooth, then spread 2 tbsp evenly over each rice cake, all the way to the edges.
3. Peel the banana and slice it thinly into rounds.
4. Arrange the banana slices in a single, overlapping layer on top of the peanut butter on each rice cake.
5. Drizzle about 1 tsp honey over each rice cake, moving the spoon back and forth for even coverage.

7. Serve immediately, or cover and refrigerate for up to 2 hours to let the peanut butter firm slightly before serving.
Rice Cakes with Peanut Butter and Banana is a simple snack that layers creamy, nutty peanut butter and sweet, soft banana over a light, crispy rice cake. The contrast of textures makes each bite satisfying: the crunch of the rice cake, the richness of the peanut butter, and the tender bite of fresh banana. A light drizzle of honey, a hint of cinnamon, and a tiny pinch of salt bring the flavors into balance, turning a quick bite into something that feels complete and intentional.
This style of snack grew out of late-20th-century American health-food trends, when rice cakes became popular as a low-fat, crunchy base for various toppings. Pairing them with peanut butter and banana borrows from the long-standing American habit of combining nut butters with fruit on bread or toast. Over time, this combination has appeared in lunchboxes, post-workout snacks, and casual breakfasts, evolving into a flexible, no-cook staple that fits into many modern, health-conscious eating patterns.
