  1. Lay the rice cakes on a plate or cutting board.
  2. Stir the natural peanut butter until smooth, then spread 2 tbsp evenly over each rice cake, all the way to the edges.
  3. Peel the banana and slice it thinly into rounds.
  4. Arrange the banana slices in a single, overlapping layer on top of the peanut butter on each rice cake.
  5. Drizzle about 1 tsp honey over each rice cake, moving the spoon back and forth for even coverage.
  6. Sprinkle the ground cinnamon evenly over the tops, then add a small pinch of fine sea salt to each rice cake.
  7. Serve immediately, or cover and refrigerate for up to 2 hours to let the peanut butter firm slightly before serving.
