
Rice Cakes With Peanut Butter And Banana

Ingredients
- 2 plain rice cakes
- 4 tbsp natural peanut butter – well stirred
- 1 banana – peeled and thinly sliced
- 2 tsp honey – for drizzling
- 0.25 tsp ground cinnamon
- 1 pinch fine sea salt
Instructions
- Lay the rice cakes on a plate or cutting board.
- Stir the natural peanut butter until smooth, then spread 2 tbsp evenly over each rice cake, all the way to the edges.
- Peel the banana and slice it thinly into rounds.
- Arrange the banana slices in a single, overlapping layer on top of the peanut butter on each rice cake.
- Drizzle about 1 tsp honey over each rice cake, moving the spoon back and forth for even coverage.
- Sprinkle the ground cinnamon evenly over the tops, then add a small pinch of fine sea salt to each rice cake.
- Serve immediately, or cover and refrigerate for up to 2 hours to let the peanut butter firm slightly before serving.
