1. Combine the water and fine salt in a medium saucepan and bring to a boil over medium-high heat.

2. Stir in the rolled oats, reduce heat to medium-low, and simmer, stirring occasionally, until creamy and the oats are tender, 5–7 minutes. If it thickens too much, add a splash of hot water to loosen; if it sputters, lower the heat.

3. Remove from heat, cover, and let stand 1–2 minutes to thicken slightly. Taste and adjust salt if needed.

4. Spoon into bowls and add warmed milk, brown sugar, and sliced fresh fruit for serving as desired. Serve hot.

Oatmeal is a simple porridge made by simmering oats with liquid until the grains soften and release creamy starch. The flavor is mild and nutty, with a texture that ranges from silky to hearty depending on the oats and cooking time. It’s a warm, comforting staple that takes well to both sweet and savory additions, making it endlessly adaptable.

Historically associated with Scotland and northern Britain, porridge was traditionally made with coarse oatmeal and a pinch of salt, often finished with a splash of milk at the table. As milling and processing evolved, rolled oats became common, shortening cooking times while preserving the essence of the dish. Today oatmeal is a daily breakfast across the world, with regional preferences guiding whether it’s served salted, sweetened, or topped with fruit, nuts, or dairy.
