Ayran is a cold, lightly salted yogurt drink prized for its clean, tangy flavor and thirst-quenching freshness. It’s smooth yet airy when well-whisked, offering a gentle lactic tang balanced by a pinch of salt. Served icy-cold, it pairs naturally with rich or spicy foods and is just as welcome on its own as a cooling refreshment.
Widely regarded as Turkey’s national drink, ayran traces back to pastoral traditions where yogurt was thinned with water for portability and hydration. From Anatolia it spread across the Balkans, the Caucasus, and the Levant, where related drinks emerged under different names. In Turkey it’s typically plain and frothy, often poured from height or served in metal cups to keep it extra cold, reflecting its role as an everyday staple as well as a companion to grilled meats and street fare.
