Wheat berries are the whole, unprocessed kernels of wheat with bran, germ, and endosperm intact, appearing as tan, oval grains. They cook to a pleasantly chewy texture with a nutty, toasty flavor and a warm cereal aroma; use in salads, pilafs, soups, grain bowls, or grind for fresh flour. Sold as hard red, hard white, or soft white types, including lots suitable for sprouting.\n\nFirst domesticated in the Fertile Crescent, wheat spread across the Middle East and Europe and became a global staple grain used in porridges and festive pilafs. Modern agriculture distinguishes hard and soft classes for different culinary uses; berries are harvested, dried, and cleaned before packing for retail or milling.
